Baking Tip: How to Keep Your Cookies from Turning into Flying Saucers

For the longest time, my cookies looked like something out of a sci-fi movie. They didn’t puff—they spread into thin, shiny discs, hovering on the tray like tiny edible UFOs.

But my daughter? Her cookies looked like they belonged in a glossy magazine spread—soft, round, perfectly puffed. One day, I stood beside her as she baked, determined to figure out the secret.
