Tortilla Rose Breakfast Cups

Ingredients
3 large flour tortillas
10 large eggs
1 cup shredded sharp cheddar cheese
1 cup fresh spinach, finely chopped
6 slices bacon, cooked and crumbled
2 tablespoons milk or heavy cream
½ teaspoon garlic powder
¼ teaspoon smoked paprika
Salt and black pepper, to taste
Nonstick cooking spray
Instructions
1. Prepare the Pan
Preheat the oven to 350°F.
Lightly grease a 6-cup jumbo muffin pan or six wells of a standard muffin pan.
2. Make the Tortilla Roses
Roll each tortilla tightly into a log.
Cut each tortilla into thirds, creating 9 sections total. Select the six best pieces and place one section upright into each muffin cup, allowing the layers to fan out like rose petals.
3. Prepare the Egg Mixture
In a large bowl, whisk together:
Eggs
Milk or cream
Garlic powder
Smoked paprika
Salt
Pepper
Whisk until smooth and slightly frothy.
4. Assemble
Carefully pour the egg mixture into the center of each tortilla rose.
Sprinkle a layer of shredded cheddar over the eggs.
Add a small handful of spinach to each cup and gently press it into the egg mixture.
Top with crumbled bacon and an extra sprinkle of cheese.
5. Bake
Bake for 18–22 minutes, or until the eggs are fully set and the tortilla edges are golden brown and crisp.
6. Serve
Allow the cups to cool for 5 minutes before removing them from the pan.
