Rustic Sausage and Tortellini Soup

There's something deeply comforting about a pot of Italian soup simmering on the stove. My Rustic Tortellini Soup brings together browned sausage, tender cheese tortellini, and a rich broth base that thickens into the perfect cozy bowl. It is simple to make, full of bold flavor, and exactly the kind of no-fuss recipe that warms your kitchen and your mood. Ingredients

1 pound ground sausage

1 medium onion, chopped

6 garlic cloves, minced

2 tablespoons olive oil

2 cups reduced-sodium chicken broth

32 ounces bone broth

1 can (14.5 ounces) diced tomatoes, undrained

12 ounces refrigerated cheese tortellini (about 3 1/2 cups)

6 ounces fresh baby spinach, stems removed

1 teaspoon Italian seasoning

1/4 teaspoon black pepper

Dash crushed red pepper flakes

3 tablespoons cornstarch (for thickening)

Shredded Parmesan cheese, for topping

Directions

Heat olive oil in a large pot and sauté the onion until tender.

Add the sausage to the same pot. Cook and stir over medium heat until the meat is fully browned and no longer pink.

Add the minced garlic and stir for 1 minute.

Add the cornstarch and mix thoroughly to coat the sausage and onions.

Pour in the chicken broth, bone broth, diced tomatoes, and spices. Bring to a boil.

Add the tortellini and spinach. Continue boiling for 5–8 minutes, or until the tortellini is tender, stirring occasionally.

Remove from heat and ladle into bowls.

Top with shredded Parmesan cheese if desired, and serve with garlic bread.
