Banana Walnut Bread

This banana walnut bread is everything you want from a homemade loaf — tender on the inside, golden at the edges, and perfectly balanced between sweet and nutty. The addition of sour cream keeps it soft and moist, while the walnuts give it a satisfying crunch in every bite. It’s simple, timeless, and perfect for cozy mornings or afternoon coffee breaks.

Ingredients

2 cups all-purpose flour

¾ cup sugar

¾ teaspoon baking soda

½ teaspoon salt

2½ very ripe bananas, mashed well (use a mixer for best texture)

6 tablespoons unsalted butter, melted and cooled

2 large eggs

¼ cup sour cream

½ teaspoon vanilla extract

¼ cup walnut pieces

Instructions

Preheat oven:

Preheat your oven to 350°F (175°C). Grease one 8.5×4.5-inch loaf pan, or three mini loaf pans.

Combine dry ingredients:

In a large bowl, whisk together the flour, sugar, baking soda, and salt. Set aside.

Mix wet ingredients:

In a medium bowl, combine mashed bananas, melted butter, eggs, sour cream, and vanilla. Blend until smooth.

Combine mixtures:

Gently fold the banana mixture into the dry ingredients using a rubber spatula. Do not overmix — the batter should look thick and slightly lumpy.

Add nuts:

Stir in the walnut pieces just until evenly distributed.

Bake:

Pour the batter into the prepared pan(s) and smooth the top. Bake until golden brown and a toothpick inserted in the center comes out with a few moist crumbs — about 50 minutes for a full loaf or 20 minutes for mini loaves.

Cool:

Let the loaf cool in the pan for 10 minutes before transferring to a wire rack. Cool for at least 1 hour before slicing.

Pro Tips

Use deeply speckled bananas for the richest flavor and softest texture.

Lightly toast the walnuts before adding them to the batter for an extra nutty aroma.

If you prefer a sweeter loaf, add 2 tablespoons of brown sugar to deepen the flavor.

Store at room temperature up to 3 days, or freeze tightly wrapped for up to 3 months.

Rich, tender, and filled with homestyle flavor — this banana walnut bread is the kind of recipe you’ll keep coming back to. ✨
